Single Blend Collection No. 2026-1: ‘Lake Barrel Batch’

Whiskey Trust’s first 2026 release combines serious peach cobbler sweetness with proof that doesn’t mess around. The Lake Barrel Batch is a four-grain Kentucky Straight Bourbon, including corn, malted barley, rye AND wheat in the mashbill. In other words, it’s a well-rounded team player, if the team really enjoys syrupy, boozy pancakes. The story behind the batch name and art dates back to the Great Chicago Fire of 1871, when ingenious spirit blenders saved 100 precious barrels of whiskey from perishing by rolling them right into Lake Michigan. When they rolled them back, they bottled the stuff as “Lake Whisky,” flashing some early Chicago marketing genius. We’re going for the same thing here.

Single Blend Collection No. 2025-1: ‘Dynamite Batch’

Through artwork and narrative storytelling, Whiskey Trust’s Batch 2025-1 relays the tale of the 1888 dynamite explosion atop the Shufeldt Distillery in Chicago. The culprit was the first iteration of the Whiskey Trust, an Illinois conglomerate in the business of terrorizing distillers who would not join—like Shufeldt, which refused to cede control. That kind of defiance makes Chicago a strong market for whiskey distillers (and drinkers), and helped us choose our name. It’s about trusting the whiskey in your glass, and the people who make it. Our inaugural blend takes in both complex sweetness and deep wood, making it an ideal sipper.

On the nose: Creme brulee crust, maple syrup, wisp of bonfire

On the palate: Oak, stone fruit, toasted waffles
