Chicago whiskey, done our way.
Whiskey Trust doesn’t distill its own whiskey. There, we said it. At least not at the moment.
For now, we’re taking advantage of a once-in-a-generation market for barrels of fantastic bourbons from Kentucky (and elsewhere) and bringing the best ones we find to our Avondale warehouse.
Once there, we methodically test each barrel over time to gauge how well it plays with others. Once we hit upon a blend that tastes magical, we vat it, rest it, and bottle it right here in Chicago.
So far, the results speak for themselves.
We care about Chicago history. Probably more than is normal.
If you’re a Chicagoan, you know our town has a rich past. And its drinking past might be one of the most interesting parts.
Yet most Chicagoans don’t know that history. That’s where Whiskey Trust comes in. Each of the batches in our Single Batch Collection pays tribute to an episode or character from bygone days of Chicago drinking.
We don’t want to come right out and say “Collect ‘em all!” But then again, maybe you should?
Just a guy who likes his whiskey.

Whiskey Trust was founded by Jeff VanDam, a Michigander by birth who has lived in Chicago for over fifteen years.
A longtime whiskey collector and Chicago history buff, Jeff sought to put his training as a journalist, attorney, and whiskey nerd to work for a new kind of whiskey company in the City of the Big Shoulders.
Instead of chasing leads or writing briefs, Jeff now spends his days tasting through barrel samples and creating magic through blending the best bourbons he can find.
